Alicante Nougat

Mediterranean. This is the nougat that par excellence connects us with other corners of the Mediterranean: it transports us to Montelimar, to the gates of Provence, to Marrakech, to Athens and even to Nazareth. In all these places I have tasted crunchy almond and honey bars, but none of them had the fine honey flavor and the flavor of our beloved Marcona almond in the background. I close my eyes and see the white light of Alicante, its blue domes and its smiling people.

Like our sea, this nougat is the most festive of all. I see my grandfather breaking it on the edge of the table and us little girls applauding his skill. I see our client families, telling us about the moment of nervousness before breaking the Alicante nougat on the table with a hammer, their eyes fixed like the knife in the nougat and zap! the piece came out straight. Good. Applause. And if it didn’t come out straight, everyone reaches for the crumbs, which are the best.
