In a radio contest, they asked the following question: “What is the best-selling nougat in Catalonia?”. The listener did not hesitate and, to our surprise, answered: “Toasted yolk”.

Toasted yolk nougat is the most beloved in Catalonia. Legend has it that it was created during the siege of the city of Barcelona in the early 18th century. It is said that a pastry contest was held to find a sweet caloric enough to withstand the siege. And Mr. Torró won, inventing the toasted yolk nougat.

Be that as it may, toasted yolk nougat has earned a place on our tables. It is the quintessential handmade nougat. With a soft texture, the flavor of burnt sugar stands out, although the egg flavor remains.
